I plan to make this a few days ahead... I make an extra big batch of rice one night and make fried rice a few days later. This is another BIG batch recipe because the leftovers make for a great second meal, but it can be easily halved. Prep and measure all ingredients and have them ready to mix together quickly in a wok.
Ingredients
4 Tbsp Sesame Oil
4 Tbsp Vegetable Oil
1 1/2 lb boneless, skinless chicken breast cut into bite-sized pieces
3 cups frozen mixed vegetables
1 bunch green onions, trimmed and sliced into thin rounds
6 cloves minced garlic
6 eggs, lightly beaten
8 cups cooked rice
8 Tbsp low-sodium soy sauce
House seasoning (to taste)
Directions
- In wok add oils, chicken, and house seasoning. Cook 3-5 minutes until thoroughly cooked, flipping to cook evenly. Remove from pan onto a clean dish and set aside.
- Add frozen vegetables and green onions, cooking until vegetables begin to soften (approximately 2 minutes), stirring intermittently. Add garlic and cook for another minute. Remove vegetables from pan with the chicken,
- Add eggs and cook to scramble. Once cooked add half of chicken, vegetables, and rice to pan mixing together. Once mixed add remaining chicken, vegetables, and rice and drizzled in soy sauce.
- Mix until well combined and cook until chicken is reheated.
