We make these from food.com once a week (sometimes twice) and really enjoy them for the ease it takes to make a big batch of eggs with little effort. Plus, the leftovers keep well in the fridge for a fresh tasting breakfast anytime. I've made these in a variety of baking dish sizes, adjusting the cooking times as needed, however we prefer to fluffy creamy texture we get in the 8 x 8 pan. These also work well to add veggies, meat, or cheese. Just saute them and mix them the final 5 minutes or so for a yummy addition.
Baked Eggs
Ingredients:
1/4 cup melted butter
12 eggs
1 tsp salt
1 1/4 cup milk
Directions
- Preheat oven to 350 degrees F
- Melt butter in 8 x 8 glass baking dish.
- In a large bowl, whisk eggs and salt together. Slowly whisk in the milk.
- Pour egg mixture into baking dish and cook for 12 minutes.
- Stir eggs making sure to mix in the cooked eggs off of the edges and bottom.
- Bake for 10 minutes and stir again making sure all uncooked egg is exposed.
- Cook for about 5 more minutes or until eggs are set to your liking.
